DETOX CUISINE Khichadi, a delicious mainstay of Indian cuisine consists of split yellow mung beans called dal, and white basmati rice cooked together with ghee (clarified butter) and mild spices. Unlike other fasts or restricted diets, following an exclusive diet of Khichadi with the addition of some steamed seasonal vegetables and fresh fruits and perhaps a few tablespoons of yogurt mid-day, supplies all the bodies' nutritional needs, It is the safest and most healing food the world has ever known.
Spices and Digestion
Cinnamon, Cumin and Turmeric, the basis of curry mixtures, each have unique therapeutic properties which aid digestion. As per Ayurveda, it is the subtle combination of the five flavors that activates each of the internal organic processes that is more important even than the nutritional content.
Cinnamon and Cumin This adds a warm, spicy energy and helps in better assimilation and transformation of food into energy. Turmeric, with its bitter and spicy flavors is well known for supporting the natural inflammatory response.
Mung Beans and Detoxification
Mung dal / split beans are unique as they provide the necessary protein and amino acids which helps enrich the protein value overall. Another important and unique aspect of mung beans is that, as per Ayurveda, they are considered to have a cool energy; they promote detoxification and help neutralize acids.

Ghee
Ghee adds tremendous flavor to foods and has long shelf life. According to Ayurvedic theory, ghee aids circulation, digestion, adds softness and luster to the skin.
INGREDIENTS:
Long Grain Rice, Mung Dal, Turmeric, Black Pepper, Cinnamon, Ginger, Cumin and Sea Salt. No Artificial Colors, Flavors, and Preservatives.
VEGAN
FREE of Gluten, wheat, soy, nuts, yeast, milk, eggs & corn.
DIRECTIONS:
Wash the grains in water till it runs clear. Add the spice mix and stir contents into 2 1/2 cups of water in 2-3 quart pot. Bring to a boil, stirring once. Cover and reduce heat to simmer. Without stirring, cook for 20-25 minutes (or until water is absorbed) then remove from heat and add 1-2 tablespoon of ghee / butter (optional). Allow to sit for 2 more minutes. Stir, serve and enjoy as a complete meal for two or as a side dish for four. Please adjust water quantity and cooking time to your taste.
FOR EVEN A MORE DELECTABLE EXPERIENCE BEFORE SERVING:
Add fresh cilantro leaves and 1-2 teaspoon of fresh lime or lemon juice. Fresh plain yoghurt can also be added.
As a side dish can be served with steamed or sautéed vegetables.
WHILE COOKING:
Add any of the following: chopped carrots, green beans, peas, celery, onions, zucchini or any chopped fresh vegetable of your choice.You can also substitute water with low salt and sodium vegetable broth/ stock.
Ghee can be replaced with almond oil or cold pressed flax seed oil.
